Baked Eggs

When it comes to easy breakfasts this is right up there for me. Perfect 2 minute preparation and then bake in the oven whilst you grab a quick shower post workout. They also taste quite nice cold as well, so if you need to bake in the morning you can simply wrap in foil and take them with you!

Ingredients
A few slices of chicken breast (can use the pre-pack)
2 Eggs
A small handful of spinach
Rye Bread (optional)

Cooking Instructions

  1. Rip the chicken breast into small pieces and add to a mixing bowl
  2. Add the small handful of spinach and two eggs
  3. Sprinkle with pepper and beat eggs until mixed together
  4. Pour into two cupcake or muffin trays
  5. Place in the over to bake on around gas mark 4 for 15-20 minutes

Serve
Pop out of the holders onto your plate
Drizzle with olive oil
